Soft, moist, and packed with little surprises in every bite. This is my favorite way to rescue bananas that are a little too ripe to eat. The walnuts add crunch, the coconut keeps the loaf incredibly moist, and the mini chocolate chips melt into every slice. It is one of those recipes that makes the whole house smell amazing while it is baking. My favorite way to eat it is slightly warm with a little butter and a cup of coffee the next morning. Ingredients

  • 1/2 cup chopped walnuts
  • 1/2 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 100 grams unsalted butter, softened
  • 2 eggs
  • 3-4 very ripe bananas, mashed
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 tablespoons shredded coconut
  • 1/4 cup mini chocolate chips

    Prepare the Batter

    Preheat the oven to 350°F (175°C).

    Grease a standard loaf pan or line it with parchment paper.

    In the bowl of a stand mixer, or using a hand mixer, cream together the softened butter, sugar, and cinnamon until light and fluffy.

    Add the eggs, one at a time, mixing well after each addition.

    Mix in the vanilla extract.

    Mash the bananas with a fork and add them to the batter.

    Add the Dry Ingredients

    In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

    Gradually add the dry ingredients to the banana mixture until just combined.

    Fold in the chopped walnuts, shredded coconut, and mini chocolate chips. Be careful not to overmix.
