Just Around Our Table
Easy No-Knead Artisan Bread
Bakery-style bread with almost no effort.
Ingredients
- 600 grams all-purpose flour
- 3 grams active dry yeast
- 8 grams salt
- 400 grams warm water
Method
- 01
The Night Before
- 02
In a large bowl, combine the flour, yeast, and salt.
- 03
Pour in the warm water.
- 04
Using a spatula or wooden spoon, mix just until a shaggy dough forms. Do not worry if it looks messy; that is exactly how it should look.
- 05
Cover the bowl with plastic wrap or a clean kitchen towel.
- 06
Let the dough rest at room temperature for 8-12 hours. I usually make mine before bed and bake it the next morning.
- 07
Bake the Bread
- 08
The next morning, place your Dutch oven with the lid on into the oven.
- 09
Preheat the oven to 450°F (230°C) while the Dutch oven heats up.
- 10
Shape the Dough
- 11
Generously flour your work surface.
- 12
Turn the dough out onto the counter.
- 13
Sprinkle with a little more flour, just enough to make it easy to handle.
- 14
Divide the dough into 2 equal pieces.
- 15
Gently shape each piece into a round loaf.
- 16
Place each loaf onto a piece of parchment paper.
- 17
Using a sharp knife or bread lame, make a few diagonal slashes across the top of each loaf so the bread can expand as it bakes.
- 18
Bake
- 19
Carefully place one loaf, along with the parchment paper, into the hot Dutch oven.
- 20
Cover and bake for 40 minutes.
- 21
Remove the lid and continue baking for another 15-20 minutes, or until the crust is deep golden brown and beautifully crisp.
- 22
Repeat with the second loaf.
- 23
Cool
- 24
Transfer the bread to a cooling rack.
- 25
Let it cool before slicing, if you can wait.
- 26
Around Our Table Tip
- 27
Do not add too much flour when shaping the dough. A sticky dough is what creates those beautiful airy holes inside the bread.
- 28
Make It Your Own
- 29
Mix in roasted garlic and rosemary.
- 30
Add shredded Parmesan.
- 31
Sprinkle Everything Bagel seasoning on top before baking.
- 32
Fold in olives, sun-dried tomatoes, or shredded cheddar cheese.
Rebeca’s notes
Bakery-style bread with almost no effort. No kneading required, only 4 simple ingredients, and it gives you a crispy artisan crust with a soft, chewy center. I love homemade bread, but I do not always have time to knead dough for half an hour. This recipe gives me everything I want with almost no work. My favorite way to eat it is toasted with butter and an easy-over egg for breakfast the next morning. Simple food is sometimes the very best food. Busy Mom Tips: mix the dough in less than 5 minutes; let it rise overnight while you sleep; a hot Dutch oven is the secret to bakery-quality crust; freeze the second loaf for another week. Tradition: Around Our Table Favorite. Cuisine: Everyday Baking. Perfect for breakfast, soups, sandwiches, Shabbat, and weekend baking.
